Facebook should have an "appear offline" option, amirite?

It does. You go to chat, click 'options', and something should say 'go offline'.

No, I think the OP means a button that allows you to chat with some people, but still are offline, so you can chat with some but not be bothered by others.

I actually think that's already a feature too. A while ago I remember hearing about a new announced featured that let's you create groups of friends that can see when you're online and groups who can't.

there is. It's super useful. so to the top left corner of your chat box, and press the little button. Inside you can create "chat lists" of people you can sort to appear on or offline at any time.!

Make a friends list on chat with all the people you don't want to talk to and set that individual list to offline. All those people will think you're offline, and anyone not on that list will see you're online. How am I the only one that knows this???
