Any half-decent instrument can convey a full spectrum of emotions. A better way to phrase your post: "In popular music, the two instruments most commonly used to convey emotion are the acoustic guitar and piano."

See, I find the simplicity and the different genres of music you can use them in make them two of the most flexible instruments. Also, they can be played very silently, so a whisper could be used to try and show suffering and such. I know it wasn't worded the best, as it was just something that popped into my head.

Eh, maybe, but for me, not the best two. I'll call the voice an instrument, and throw that up there with a good violin for my best.
