It's saying everyone would be vegetarian if they saw what was going on in slaughterhouses because what goes on in those slaughterhouses is so gross and depressing, you wouldn't want to eat meat.

You don't necessarily need meat to survive, i fact it takes so many more resources to produce it than simply growing crops. We as Americans actually have the option to discontinue needless pain and suffering of our fellow creatures, so why the hell would you eat meat? As this post says, If you knew what happened in a slaughterhouse, you'd never go back to meat.
