Cow = steak, beef and more - it depends on the cut. Pig = pork, ham, bacon etc. - same story. It's the same as "fillet of fish" or "chicken breast" really

Don't quote me on this one, but I was under the impression it came from the French. It's pretty obvious English and French have mixed a lot over the years, after the Norman Conquest of England, the English language became irreversably intertwined with French. French for cow meat is "le steak", for ham, "le jambon", beef is "le rosbif". It's pretty easy to see where these came from--not to mention the fact that many cooks in England were, indeed, French. It would make sense to give the order in French. That's what I figure, anyway.
