It's cause Walt Disney was very depressed about the passing of his own mother. So, he killed the mothers off in the films, or didn't add one at all

That's just a story. That wasn't why.
I mean, a ton of Disney movies without mothers were made after his death (The Little Mermaid, Aladdin, Beauty and the beast, and more)

A lot of the source material such as Grimm's fairy tales are tragic in nature, and the best tragic heroes are missing a parent or two. The Disney characters are in good company, with the likes of Luke Skywalker, Batman and basically every superhero ever, pretty much everyone in Game of Thrones/ASoIaF (to some degree), Dumbledore, and your character in the pokemon games among others. That type of protagonist makes for a really good story, because they are generally relate-able, which means the audience wants to see the hero overcome odds and succeed.
