I thought it stood for "see ya" whenever I saw it (which admittedly isn't often.)

it does, what OP was trying to say was that although it now stands for see you later, or see ya in text messages, it once stood for "cover your ass" :)

When was that? I can't think of a time when people used acronyms for everyday talk, before the invention of text speak

It was for moments when you were trying to be discrete. For instance people would say XYZ to people whose zippers were down.
