Diamond are the strongest naturally occurring substance so it's symbolic maybe? That, and they're pretty and sparkley.

De Beers diamond company marketed diamond rings as the true sign of love/wedding rings. Rings were worn as a symbol of eternal love and marriage starting with the Egyptians, continued with the Turks and Indians but not until the early twentieth century was it stereotypical to have a diamond.
