How is it that when soda comes out of the tap at a restaurant and doesn't fizz at all, but when you pour it straight from the bottle, it goes ballistic and flows over the cup, amirite?

There isn't any air pressure in the soda fountains.

It helps to slightly tilt the cup when filling it; it prevents some fizzing.
