Agreed. His business would have lasted so much longer if he'd just left the trees standing so that they could regrow the tuffs. It was really a poor business decision to cut them down. I think the new movie attempts to explain it, though - the Once-ler's overbearing mother says it's too slow to just harvest the tuffs from growing trees, so she convinces him to cut the trees down instead.
