By interested do you mean: "That girl/guy is kinda hot." or "I really like that girl/guy." Because when I see a random hot guy like downtown or something I forget about him pretty quickly, and I'm sure when a guy actually likes a girl they think about them a lot.

I don't know about guys, but when I see someone I'm interested in but can't see them anymore, I don't care too much and forget about my interest (just like how guys typically are described by OP). Unless, that guy fit a lot of the qualities of my ideal guy, then he would really appeal to me, and I wouldn't be able to stop thinking about him. I saw a guy at school in May but never got to talk to him, and to this day I can't get him out of my head because his particular looks struck me more than anyone else's.
