Yeah, the human eye only sees a small fraction of all of the colours in the world, we only see the ones in our range. For example, ultraviolet and X-ray are colours that exist, but our eyes cannot interpret. :P

There is, and it's called Ultraviolet. Violet is the color which has the shortest wavelength of visible light, and ultraviolet has a shorter wavelength, so that's why you can't see it. Some animals can see it, though.
