It's part of character development so the viewers can know how certain characters are subconsciously dealing with events.

(Duh, amirite?): Actually they left the ending open. They didn't conclusively imply that the whole thing was a dream, and personally I thought the film made it seem much more likely that it wasn't a dream

It's like in "Bones" when Booth was in a coma and dreamed that he and Bones were married and owned a night club and when he woke up he thought it was real and was (obviously) in love with Bones.
