+428 "He's a Jew" seems so much more insulting than "He's Jewish", even though they imply the exact same thing, amirite?

It's similar to the difference between "He's black" and "He's a Negro." To use the adjective "Jewish," it's merely descriptive, but when you call someone "a Jew," the implication is "Oh, he's one of *those.*" It's all about connotation, which is basically the technical term for what you're saying.
