we need energy reserves in order survive, otherwise we would need to eat a little bit constantly

well yeah, you'd still have some fat for that purpose. but you'd only have enough fat to be healthy.

Some people need more than just enough to survive, if you just mean the suggestion of 2000 calories. For example being an athlete I burn a little over 2000 calories a day. Different people have different needs.

"Needs" is subjective, though. "Needs" as in you have just enough energy to go about your day with relative normality and refrain from damaging your body as a result of malnutrition, or "needs" as in you're in perfect health. In some cases, the latter could mean that a particular person is perceived as being a bit pudgy. Others might just be average weight, but some people don't even want to be average weight; they want to be skinny.
