"Pika" is the Japanese onomatopoeia for a spark or a fire starting. So since Pikachu is a mouse that makes sparks and lighting , her name is very appropriate. I found this on OMG Facts, I believe.
Actually pikachu is based on the pica, which is another kind of rodent, so you would have to change the stem too. The new name would probably end up being something like "tabbymeow."
