It could've still been shot in a way to be through the main character's eyes rather than a video camera. Either way, it's possible to do.

Most of the sinking wouldn't be that exciting. Most people didn't go running back into the ship after evacuating to rescue someone handcuffed to a pole. Most people also either got on a lifeboat and stayed there, or didn't get on one at all. Anyone filming the sinking would probably have just been standing around with the masses of people, clutching their family, and either going down with the ship or getting on a lifeboat and sitting there doing nothing but hoping to be rescued. That wouldn't be very interesting for more than a few minutes. Even if they tried to interview people, imagine how that would go: "What do you think is happening?" "How the **** should I know?!" "How do you feel right now?" "How do you think I feel? Get your damn camera out of my face!"

As a remake though, it would be as though Jack was holding his camera the whole time, not just some random passenger on a lifeboat.

Which runs into the problem already stated by two other people. It would have to be a different ship sinking, in a different year, under different circumstances, with different passengers and crew members. Odds are, nothing as exciting as Jack and Roses's love story would happen, because if it did, it would be the Titanic, and people have already said why it can't be the Titanic.
