I like my egg salad with free-run eggs...and a bit of parsley and Hungarian smoked paprika...
Oh and some finely chopped pickle.
I use eggs from the farm down the road.
Chickens run free and some are even friendly!
Your egg salad sounds much like mine, but i also put celery in it.
The chips add salt and crunch. But..it is only a matter of personal taste:)
