Cats are often very cautious or alarmed about any unknown thing that suddenly appears in an environment they feel safe in. Not an amusing answer I know, and neither is purposely scaring them and making laughing videos about it, I don't think.

They're not scared of cucumbers. The shape reminds them of snakes. Also, in many cases the cats are eating or otherwise off-guard. It's a violation of their trust in their humans to do things like this.
