I feel like I'd get more out of the books if I decided to tackle the whole series from scratch. I have read all SparkNotes and all CinemaSins and CinemaWins videos though.

Maybe tell her all this? Don't watch it or make a compromise? In 20 years my wife has never said "we need to watch this together" and gotten the least bit upset when I said I wasn't interested. It's healthy to have separate interests.
I mean, i loved HP as a kid, and i do like it now - it holds great memories.
But i think that if someone missed it as a child, they won't like it as a grown up, or not as much, because we shouldn't forget that HP was written for kids. That's why the characters are children doing childlish stuff ⅔ of the books and the show.
It's treated as a fantasy classic (which is totally fine by me) but it'll never catch up to TLODR or GOT or any other great fantasy made for a more mature audience and it doesn't have to.
I like Marvel movies. Then again, I grew up with them. I grew up with Spider-Man, X men, Fantastic Four, etc. Plus, I think people have more respect for Marvel with the long history of comics than a recent, children book, called Harry Potter.
I respect your opinion tho. Marvel is not for everyone like Harry isn't either.
First three movies. Fell asleep once on the first. Watched the first again only to fall asleep on the second and watched that again. The third, I managed to stay awake.
They're kids films. They're not meant for adults, it is not an unpopular opinion that Harry Potter is boring for adults (or at least it shouldn't be). Also, they were written for a British audience and were meant to be relateable specifically to British children around the age of eleven. It is not surprising if you, an adult American (from Texas, no less) do not find much to relate to in them.
Still, you should still watch them. They're a cultural touchstone for an entire generation, some things you just have to watch so you're not out of the loop. And if you're going to watch them at some point, might as well be when your wife wants to watch them with you.
But also, just because a piece of fiction isn't relateable and you don't enjoy it straight off, doesn't mean it's bad. It's always a good idea to take an oppotunity to broaden your horizons.

Well, they were initially made for kids and the movies are based off a book series. If you didn't grow up with the books and films it's understandable that you don't like it.
Well the characters started out as kids and gradually grew up. Maybe that's why it feels like that. For the record I did grew up watching the movies. But overall, I enjoy the magic aspect of it
After finally finishing the first one, I just gave up on it. The franchise didn't seem like my cup of tea, and the creator of it certainly doesn't help HP's case
As if 18 hours is a lot for a franchise. By the way, when they grow up, things won't get much better (maybe they'll only get worse)

Get your wife to give you a recap or watch YouTube summaries of the first two and start with the third movie

Fair enough. It's just not for you. Even when they grow up the don't go beyond 17/18 and that's at the very end.
