People watch grisly, horrible things all the time. Things that are horrific, disgusting, cringe, etc. but they can't look away. There's no guarantee you wouldn't want to keep watching.
Think of the times when someone refers to something as a "train wreck". Apply that to this saying as well. It's just a phrase people use for catastrophic situations, messiness, etc. It doesn't mean literally people like watching trains wreck. Its saying that we tend to find some weird entertainment in watching things go badly.
