My roommate once started making broth for soup while I was taking a nap then went to hang out with our neighbor, leaving the pot to simmer. I woke up in a gray cloud of smoke since the water cooked off and my pot was a full of charred bones and meat. My pot still has black stains in it. Oh and the smoke alarms never went off 🫠

Do look up some Brazillian soups! If you like meat, Vaca Atolada (direct translation would be Stuck Cow stew, yes that's the name, I don't know why) is one of my favorites. Also try Caldo Verde (translates to Green Broth) for a vegetarian alternative (although having some ribs or bacon make it an instant 10/10)

I made a really healthy spicy soup when I was sick a couple weeks ago and when I'm sick, I crave soup. So those perfectly good ingredients tasted amazing together, helped me get better and I can't think of any other dish where that many super heathy ingredients go well together.

Soup can still be very flavorful. Soup is good if you have an upset stomach because it can taste good, easy to make, and requires less effort on your stomach to digest. A nasty cold on a chilly day, a good soup slaps as hard as a 5 course meal.

Most soups are pretty mid imo. There are some exceptions where the taste is something desirable, for example chicken soup with real flavorful chicken and torched onion n garlic etc which gives the broth a great taste with some noodles, or ramen, but overall I agree with your point that you can make better tasting and better textured dishes with these same ingredients.

I never get excited for lunch when it's a soup. For me that means the main dish is bread and the soup is just my bread sauce and I wouldn't consider it something that will make me full. The broth makes it feel like a drink with extra steps. That said, I love the taste of most soups, I would just never ever make it myself because that's a lot of preparation for something I would have to eat two or three plates of to feel less hungry without adding bread.

Have you tried Vietnamese pho, Korean sullatang, Thai tom yum, Jewish chicken soup with matzo balls? 😋. These soups are all based on the long cooking bones to make a bone broth. It's leftovers to make a soup bc it feeds more people and stretches when you are poor. I don't think I could make anything tastier with these leftovers. Asian soups are so packed with flavor and yummy! I don't get it, but more power to you!

Soups without meat protein make for a good argument. I'd rather have a good cheesy potato soup than a baked potato with cheese on it. Same for soups with beans like a three bean soup I had at a German restaurant. I don't want beans by themselves, unless they're bush's baked beans. Also old timey cheese and bread soup; using stale bread and old/hard cheese you can make a delightful and filling soup instead of rawdogging 2 separate stale ingredients. 🤷‍♂️

In the cases of tonkotsu ramen and beef pho, animal bones are an essential ingredient and it is the best version of food that one can make with them. There is no better way to prepare food using pork bone or beef bone than a soup. Also, those are incredible soups, so it's not like the ingredients are finagled into being decent food. They are legitimately used to produce something that is awesome.

Where do you draw the line at soup? Does it have to be thin because personally I like a thick soup with a high amount of solid parts. My chicken soup is basically chicken and gravy and sometimes I put in noodles so it's almost a pasta. Also do you consider stew and soup the same thing? My family makes a thin stew however the recipes I see are thick like gravy. I think if we agree soups are thin and stews are thick then my family makes a beef soup and I a chicken stew. Anyways I'm just curious if I call my chicken noodle a chicken pasta of some kind would suddenly change your mind about it? Similarly what's the difference between a chicken nugget, chicken strip, and popcorn chicken?

Most vegetable based meals are made pretty bland but they don't have to be. Use fresh ingredients - any vegetables you want basically. I recommend potatoes or even better sweet potatoes for a really creamy texture. Add in water ofc and preferably coconut milk. obviously garlic and onion. Maybe some ginger and/or cayenne for heat if you're into that. Blend it all together until it is a smooth consistency. Add spices to taste. (I also add in sauces if I want, like soy, bbq or sweet chili.) Heat up. Boom, done. It is easy, nutritious and delicious — if it isn't delicious, it is because you messed up with the spices because the taste is completely up to you.
