the reason the hair salon ladies cut it like that is because your hair has dead does and they just want to trim all that for you. Having dead hair or split ends is very unhealthy for your hair, and it prevents then from growing any longer.

One time I asked my hairdresser to give me a trim, and she cut off almost nothing, I couldn't see a difference, and I still had split ends.
