Because it was supposed to be their last game because they were bankrupt.

Final Fantasy was named as such because Squeenix intended for it to be the last game that they produced, as they didn't think they'd have enough money or manpower to make another one - and because it was a Fantasy game. They were very surprised at how well-received it was, and decided to make another. It's that simple. ;)
