I know this! My friend told me just the other day how it's this guy who invented a kind of morse code that helped a lot in ww2, but someone imprisoned him because he was gay and then he injected an apple with poison before taking that bite and dying.

It's actually a commemoration for Alan Turing, I think. Turing is also known as "the father of computer science".
The apple [and the bite] is significant because Turing committed suicide right after he came out as a homosexual. In his time, homosexuality was still a "condemnable act" and he was shunned by his colleagues. Thus, he committed suicide by injecting cyanide into an apple and taking a bit out of it.
And the apple logo was born.
This is just my perception and a few articles I've read.
