Yes, most people usually for a while when they come out. Then they start to realise that they're sexuality is just one part of who they are.
Sometimes the same is true for young people with other things (IE, being in a music subculture, vegitarianism, etc.)

Most of the guys you see walking down the street and it's very obvious that "oh, he's gay", they make it their identity. However, there are many many many gays who you wouldn't be able to tell, even if you're talking to them (and they're out). But it seems to you that all gays make it their identity because they are the ones you notice most often.

Like Kurt on Glee. I'm kind of mad at the writers for that one. Every other character has broken free of their stereotype in some way, but his whole personality is: Gay. He has few other traits.
It's not as common in real life but on tv it happens way too much.

I would suggest that the only reason you think this is because it's much easier to notice the ones that do. I know plenty of gays who don't act this way.

Not necessarily. I have a gay friend and even when he came out to me (I was one of the first) it wasn't his Thing. His thing was, and still is, being a freaking awesome photographer.

Not always. It's just the people that make it their identity are the ones that are most noticeably gay.
