I am almost certain that shooting water at the sun would make it worse. The increase in water would increase it's mass, in return increasing the gravitational pull on the plasma. This would result in the sun increasing it's rate of fusion to maintain an equillibrium between gravity and the outwards radiation pressure, therefore releasing more energy and making the Earth hotter.

Yes, but technically it would still be water, and it would still reach the sun because gravity would be pulling it towards the suns centre.
