You're not wrong but idk if this is unpopular. I don't see very many people suggesting PhDs as a great career move with few exceptions, usually for someone who is demonstrably excellent in their field and wants to teach and/or do research for a living. In which case it's probably not the worst idea assuming they know what they're getting into. But if you want a PhD just to go hit the job market, you're likely not being very efficient with your time and effort.

It depends on what you study. I know right now if you have a PhD in Anatomy or even Anthropology you can get a job teaching Anatomy pretty easily

Completely depends on what you are study. PHDs are as varied as bachelors and masters degrees. Also anyone that smart and hard working, I'm pretty sure they'll find a way even if it's not in their field. I don't hear a whole lot of struggling doctors out there. Also you are already experienced in your field and have likely done internships, research projects, and other various types of work with other professionals already. You aren't coming out of school with no direction.
