Roses represent love because even when the flower dies, the love will live on.

1) Roses are red or pink wich often symbolize love (plus rose means pink in French and is a derivative of words for the same colours in other languages) 2) Historically speaking it was a symbol of the Goddess Aphrodite in ancient Greece and a symbol of Venus in ancient Rome. 3) The same reasons as stated above.
