Actually, because Stanley was supposed to lose a lot of weight throughout the story they just ignored the fat part, because they didn't want to make a child do that (special feature interview).

Yeah, because Emma Watson must be so self-conscious about playing a frumpy-looking girl. She must be really insecure about her looks. She's not gorgeous or anything.
