it's shaving cream. whipped cream would go bad too easily.

I've seen real pies used. Coconut or banana cream, it looked like. But I know most of them aren't =) I don't think they're always shaving cream though, because I often see people wipe some off their face and lick their fingers... don't think they would do that if it was shaving cream O.o
