If a guy wins a record for running fifteen miles in 5 minutes, then runs sixteen miles in 5 minutes, he doesn't get more records. He still holds the record, but the bar is set higher for those who want to compete with him.

You kind of fail. He'd break his own record once, but after that it'd stay static. If it were for most records BROKEN, then events would proceed similar to your proposal, except it would end in 'unlimited records broken' as the record, not unlimited records
