The roof of your mouth is classed as the hard palate, while the part of your mouth your tongue naturally touches while articulating that sound is the alveolar ridge. So unless you purposely concentrate on doing it, you naturally don't touch the roof of your mouth. It's an apico-alveolar phoneme, not apico-palatal.
