+483 The good animal meat comes from the muscle, not the fat. So why stuff a thousand animals into a tiny cage with nothing to do but eat all day? Let them roam, or better yet, set up a little chicken boot camp or some sort of cow YMCA center. More humane treatment for them, better quality meat for us. amirite?

If they let them walk around then the chickens and cows would lose weight, which means less meat. They think about the quantity, not quality.

Muscle = the meat. Fat is meant to be minimal, not primarily fat. If you're eating a steak and come upon a piece of fat, you're most likely going to spit it out because it's gross.

then why is Kobe beef so sought after? it's because of its fatty, well marbled meat. you NEED fat in a steak to ensure its tenderness, it keeps in the moisture. thats why most people don't eat horse meat, its too muscular and therefore too tough. educate yo'self

I don't know, I've never heard of Kobe beef. I know you need some fat, but most of the time you don't want too much. Maybe I'm weird and talk to weird people, because elk and buffalo are SUPER lean and they're my favorite.

yep, theres probably a reason most people eat beef, and not elk or buffalo. and kobe is a very high quality beef, you can expect to pay over $50 for one steak.

Mostly it's because unless you buy from Whole Foods buffalo and elk have to be hunted. And the reason why people don't eat horse, at least in the U.S. is that it's illegal to. I looked up Kobe and the reason why it's so expensive is that they're kinda rare, as far as meat goes because of the location standards. If you look at meat from McDonalds or KFC the meat is graded so low because of the fat content, so the higher the fat percentage the worse quality it is given.

or because they go through 10,000 stages of processing. a nice, well marbled cut of beef is the highest grade you can get. and the elk and buffalo would be available in stores if there was a high enough demand for a lean, tough meat, which there isnt.

Elk and buffalo aren't tough. One reason they're so hard to get is that they're endangered. They're still juicy, they're just not falling apart and have a better texture. Have you ever had high quality meat? It's like the difference between getting a McDonald's burger and... anything that's high quality.

Hmm. I must say that I am the opposite. If something is lean, then any fat is does have is marbelized very evenly but it has more pure meat.

Yeah, pretty much what everyone else said, the goal isn't to make the cows get fit or buff. Muscle makes the meat tougher and the more work the muscle does, the more tough that muscle will be. There are plenty of cows that grow up on good farms where they have tons of acres to graze upon. It's the mega industrial farms that pretty much have the factory system of producing cattle and beef.
