When a zombie bites a human, they are introducing a virus to the system. What exactly the virus does is dependent upon the version of zombie lore you look at, but the most commonly accepted virus is one that kills the human and then controls the body after its death. This virus then becomes highly transferrable through saliva. If the saliva finds its way into your bloodstream, you've been infected with it. Our bodies normally don't have any bacteria or viruses that can control another living being's mind, let alone one that can revive the dead.
