A lot of private Catholic schools here in New Zealand have chosen not to teach the evolution topic in Biology all together!

Not how it works. Whether or not they teach evolution, they still teach all the complex ideas that you refer to.

I go to Catholic school and science class is just like any other science class. Although now that I think about it, I don't think they've ever really taught evolution...

I went to a christian school in 7th grade and we took biology and focused a lot on evolution. There was a bible class we were also required to take where we learned about how god created us.

Nope, went to a catholic school - we were taught the same curriculum as any public school. However, writing "God did it" as the answer on every test question and then daring the teacher to challenge my "strong beliefs" was quite satisfying.
