In history, cultures who use chopsticks went through economic hardships. To save on the fuel they used to cook food, they would cut their food into small pieces so it would cook faster. This eliminated the need for knives, and thus chopsticks were introduced.

As I_Fly_Sometimes said, it would eliminate the need for knives during eating. You generally use different knives when preparing food than you do when eating the food.
