J.K. Rowling has actually said that Hermiones Time Turner had limited uses and the longest interval she could travel is one hour. And secondly, the time turner doesn't allow you to change the timestream. It's linear. Not applying to the multiverse theory.

McGonagall had to pull all sorts of loopholes to get one for Hermione. Also it was "five minutes to midnight" when they went back to what I think was 7:30...I could be getting my numbers mixed up, though.
