Believing in science and religion is completely understandable, but it's kind of mind-boggling that some people just completely disregard scientific facts for something that couldn't have possibly happened, amirite?

This reminds me of a person I know who believes that dinosaur bones were planted by God to test our faith in Him. I may be religious as well, but that is just a little too absurd.

If God planted dino bones, he did it by having real, living, walking dinos at some point. I can't believe people sometimes.

I can understand how a religious person might believe some things that "could not possibly have happened". Belief in an all-powerful God or supernatural power nigh on necessitates belief in His ability to bend the laws of nature and/or in ways that we cannot understand (e.g. miracles and the like). To say that that is a reason to discredit a large portion of scientific theory and facts (old earth, evolution, et al.) is quite another thing entirely.

What people don't realize is that while religion is strict, they still cannot ignore facts. I, and many others, have tailored religion within the religious boundaries to fit ALL of the facts about creation and the world.
