Guacamaole has a ton of stuff in it other than just avocado: lemon juice, salt, pepper, onions, sometimes tomatoes or mangos, anything

So can mashed potatoes (onion powder, garlic powder, salt, butter, other herbs and spices). What I think differs it is that those things aren't necessary for mashed potatoes, while they are for guacamole

Guacamole is a perfectly logical and suitabale name. Guaca (short for aGUACAte=avocado). mole translates to sauce. So there ya go
