Um.. no they don't? If speaking about generally healthy individuals, humans have control over their eyesight. We control everything from focal point and depth of field to angle of vision based on how we move our eyes. Our eyes are controlled via small muscles almost exclusively voluntarily. The only time I can think of involuntary movement is during sleep with REM or if forcing eyes closed from fright etc but that would be emotional reaction at that point (therefore partially involuntary) human biological functions are extremely complex and those that are voluntary we typically have complete control of them. I'm not sure where your analogy lands with the "aim assist" moniker.

If you're in a fast moving car and looking into the distance and you look at a tree you're eyes involuntarily track the tree. Or at least that happens too me only.

No, that requires muscle function you are doing that yourself whether you're aware of it or not is a different story. This is one of those complexities I was talking about. When you're riding a bike for a while you'll "forget" that you're actually riding the bike so when you need to keep pedaling to keep moving your legs need more muscle movement to keep them going you are doing that it's not autonomous. Body functions that are involuntary like the digestive tract for example you might be able to consider them a form of "assisted work" but even then, those are more like "background tasks" on a PC.
