It's actually white when pure. They add colorants to the artificial stuff to make it better resemble the impure natural stuff.

I didn't know that - interesting info. When possible I've tried to buy vanilla from Mexico because it seems to have more taste, and it's a dark brown. I had been told that Mexican vanilla was more pure and didn't have all the artificial stuff in it. Learn something new everyday.
