If Darth Vader hadn't gone on that ship at the end of Rogue One, just so fans could salivate over his Lightsaber scene, and simply blown it up instead, there would've been no Original Trilogy.

The story seems predicated on the stolen plans being a single, recoverable item. So either its the only copy and the empire needs them back (unlikely), or they want to confirm positively that they have recovered them. Either way, blowing up the ship isn't a great method. Of all the Star Wars plot holes, I don't really see this as one.
