It's because it's made of meat from the upper leg - ‘ham' as in hamstring.

Because it's a demonym of Hamburg, Germany. It's a word that just describes a beef sandwich.

Next you'll try to tell me that my hamstring isn't made of pork. Or that a hammer isn't a pig.
