It's not clear on what you mean there. If an anniversary is a fixed date like 21 June, it's like a birthday: you don't get a choice of the day of the week. An anniversary celebration might be scheduled for the weekend, but that's a different question.
So it is clear what they mean, you're just fixated on their literal wording.
If you're trying to make a specific point, getting the literal wording correct would be a good thing. OP could be trying to organise a party. ;)

Ya, but no. Because the day on a particular date shifts forward every year. For example, Jan 1 2021 is a Friday and Jan 1 2022 is a Saturday
So, over the course of 7 years, all the anniversaries are spread over the week.
My youngest brother was married on February 29th.
If only the days of the week that each date fell on each year changed or something.
