Cooking stuff in water makes it soft. Cooking stuff in oil makes things hard. Cooking in water with a bit of oil makes the pasta not sticky. Cooking in oil with a bit of water makes a mess. amirite?

Nope. That's a myth. At best it breaks the surface tension of the water and prevents boil overs

I beg to differ. As the dry pasta hits the oil, it coats it (the pasta has to hit the oil before the water). The reasons chefs don't do it is because it makes the pasta slippery and the sauce doesn't stick either.

Putting oil on your pasta keeps the sauce from sticking to the noodle. No bueno
