Nope, the change from sea bug to delicacy was driven by 3 things. 1. Overabundance 2. Industrial canning 3. The emergence of cheap railway tickets and coastal access. Industrial canning allowed for mass produced cheap food that people started consuming as a cheap food source. As railway access opened and allowed tourism from to non coastal states, people who wrre eating canned lobster travelled to and created a demand for fresh lobster somewhere around 1880. When ww1 and 2 broke out, lobster's abundance was on a short list of unrationed items which fueled unprecedented consumption by the rich.
