I think it depends on the cheese for me. Some cheeses aren't as strong to me after they're melted while some get stronger. Like mozzarella, real mozzarella is sweet and the brine is just a bit salty but I feel like it loses the sweetness once it's melted so I always eat it cold. But then a sharp cheddar, I feel like it gains something when it's melted, I feel like the flavor is more pronounced.

I like the texture of melted cheese. Unmelted cheese just makes the food feel unfinished and raw to me
