Mint is great; I especially love when it's in the vein of Grasshopper pie, with fudge swirls and chocolate cookie bits for some added texture. The extremely anti-mint sects on the internet were kind of mindblowing for me to discover, much like the anti-pineapple-on-pizza people. These are long-established favor profiles, and I feel like the internet just gave a soapbox to some really sheltered, tasteless people that never would have been as loud before.

I'm just not a big fan of pineapple but I'm down with fruit on pizza otherwise (pears yum.) That said, I like pineapple much more than coconut as a general add-on. The flavor is fine; it's a texture thing with coconut for sure (though I've acquired a taste for water chestnuts oddly enough, probably the crispiness) and possibly with pineapple (I love various American-Asian cuisines and I'm not a big fan of pineapple there either.)
Mint depends on what kind of mint. Wintergreen and spearmint is better than peppermint but I don't dislike any, I just have to be in the mood to enjoy it. And with ice cream I'm just not big on a lot of flavors lol. My teeth are sensitive so I have a lot of things to rule out. Chocolate chips are touchy, they can be rock hard little chunks, and most mint ice cream has chips in it.
