People "eat" with whatever sense the food interacts with first. When you're cooking fragrant food, it fills the house with the smell. If it smells good, you know it'll probably taste good and can overlook the presentation. In a restaurant environment, that's usually sight. Whether it be on the menu, seeing plates on another table as you are seated, or as the dish is placed in front of you. If the entire restaurant smells like one dish, it's usually off putting.
