I've never heard the former describe himself as that. I know a ton of the latter, though.

What do you mean by self-image, do you mean attitude towards others? I don't really understand. What is the difference in your opinion?

Vegetarians and carnivores who eat meat or vegetables are neither. They are omnivores.

Vegetarian isn't a classification of food eater. The word you're looking for is herbivore. I don't think anyone is trying to make the claim that humans aren't omnivores.
